Biography

Dr. Marie-Luise Puhlmann holds a PhD in Gut Microbiology & Human Nutrition and is currently a Postdoctoral researcher in the Nutrition, Microbiome, and Metabolomics group led by Henrik Roager in the Department of Nutrition, Exercise and Sports at the University of Copenhagen. She holds degrees in Human Nutrition & Health (BSc, MSc) and Food Technology (MSc) from Wageningen University & Research, with a focus on the chemical and physical properties of food and their effects on the human gastrointestinal tract.

Initially, her research centered on how macronutrients behave in the upper gastrointestinal tract. However, during her PHD research, she became captivated by the intricate roles of dietary fibers on human health through the gut microbiome. Her vision is to rethink the way we examine food products by shifting from a reductionist, nutrient-centric perspective to one that embraces whole foods and their complex plant cell structures.
