James Slater
James Slater is the R&D Director at Puratos UK, where he leads innovation across bakery and patisserie. With more than 15 years at Puratos, James has driven several of the UK’s major advances in sourdough and fermentation, including the development of locally made living sourdoughs, gaining understanding of the flavour potential of different flour varieties.
A specialist in food science and bakery technology, James is recognised for connecting ingredient innovation with health forward consumer trends—particularly in areas such as fibre enrichment, grain based nutrition and digestive wellness. His thought leadership extends into emerging technologies, where he has explored how AI and data driven tools can enhance quality and process optimisation in modern bakery production. James also previously served as President of the Association of Bakery Ingredient Manufacturers, supporting the industry’s advancement through responsible, future focused ingredient innovation.
