From Pure Ingredients to Better Meals: Developing Shelf‑Stable Protein Convenience
In this session, Jens Madsen from DAVA Foods will share how convenience and nutrition can go hand in hand when products are developed with care for raw ingredients and processing methods. Using three product groups – DAVA Protein Chips, DAVA No‑Meat products and DAVA Protein Omelettes – the presentation explores how shelf‑stable, convenient foods can still be real food. Jens will highlight DAVA Foods’ approach to product development, focusing on mild processing, great taste and functional nutrition. The products are designed to be naturally rich in protein and fibre, lower in fat and easy to work with, while avoiding ultra‑processing.
