This session will showcase how upcycled ingredients can be turned into commercially successful food products without compromising on taste or price. Using bananas as a global case, it will explore the scale of food waste and the opportunity for upcycling to drive more sustainable food systems.
Focusing on the functional qualities of bananas, the session will highlight how they can act as a natural “plant-based butter” and source of sweetness, enabling reduced sugar while maintaining taste and texture. Through Banana Cph’s approach, it will demonstrate how surplus bananas can be used across a range of products without resulting in a banana flavour.
The session includes a product showcase and tasting, offering a first-hand experience of how upcycled food can deliver familiar, indulgent taste and texture while creating positive environmental impact at scale.
