The Protein Brewery
The Protein Brewery is a Dutch food-ingredient innovator advancing sustainable nutrition through biomass fermentation. Headquartered in Breda, the company operates an FSSC-22000 certified commercial facility and is scaling toward more than 2,000 MT of annual production capacity by 2030.
Their hero ingredient, Fermotein®, is a nutrient-dense mycelium powder produced by fermenting a proprietary food-grade fungal strain. In a single whole-food ingredient, Fermotein® delivers 50% complete protein (full amino acid profile), 30% fiber, essential micronutrients, and the highest food source of spermidine (7-10x wheat germ).
Unlike isolated proteins or fibers, the ingredient is a whole matrix in which nutrients and bioactives are naturally co-located, supporting both nutritional density and clean-label formulation.
Preclinical studies show that Fermotein® elevates GLP-1, induces prebiotic short-chain fatty acid responses, and increases gut microbial alpha-diversity. These properties position the ingredient for use in active nutrition, better-for-you food, and dairy alternative applications, with special relevance to longevity, metabolic, muscle and gut health categories.
Fermotein® holds a positive EFSA safety opinion, the first ever for a fungal biomass under the EU novel food framework, with EU authorisation anticipated in summer 2026. A near-final UK FSA safety assessment is in progress, and The Protein Brewery holds exclusivity to sell Fermotein® in the USA and Singapore.
With 44 employees, €30 million in Series B funding led by Novo Holdings, and commercial supply already committed to leading US customers, The Protein Brewery is building the platform to make fungal mycelium a foundational ingredient for the next generation of nutrition.
