Stef has been an editor and journalist for over 15 years, working for The Telegraph, Global, Time Inc UK and Ethica Magazine, and as a lecturer in Food Journalism.
Stef became vegetarian at the age of 13 and has been vegan for several years. She is passionate about veganism and plant-based food and has written extensively about the subject.

Carole is a Technical Specialist working in RSSL’s Product and Ingredient Innovation Team. During her time with RSSL, Carole has undertaken ingredient evaluation and product development projects on a contract basis for clients in different food industry sectors.
A Food Science graduate from Reading University, with a Master’s degree in Nutritional Medicine from Surrey University, Carole has over 25 years’ experience in the food industry. This vast experience includes developing dairy and vegan meat alternatives based on plant proteins as well as working with a wide range of sweeteners and bulking agents across many food categories.
Toni Vernelli is the Head of Communications and Marketing at Veganuary.
The daughter of a butcher from a small town in Northern Canada, Toni gave up meat in her teens when she learned that we can be healthy without it. Now vegan for more than 30 years, she believes passionately that we need a mass shift towards plant-based eating and is proud to part of organisation fuelling this change. She also holds a PhD in Animal Behaviour.
Kristen Rocca is a Principal at Unovis / New Crop Capital, a global investment firm that provides early-stage funding to entrepreneurs developing alternatives to foods derived from conventional animal agriculture.
As Principal, Kristen explores deal flow with a passion for frontier tech opportunities and works closely with founders to solve daily challenges, evaluate strategic decisions, and support growth initiatives. She holds an MBA from IESE Business School and a Chemical Engineering degree from McMaster University.
Prior to Unovis, Kristen worked in the energy sector in various roles including product development, operations & corporate sustainability, then moved into sustainability consulting for international corporations, and growth strategy for early-stage start-ups.
Kristen is passionate about planetary and human health, and working closely with founders to tackle some of the biggest challenges in our food system.
